Garlic Fish Taco's

Jim had his first fishing tournment of the season and brought home a couple of pounds of cobia, which is a thick white fish that resembles swordfish (OR SO THATS WHAT IT REMINDS ME OF). I've been making diffrent recipes all week with it and wanted to share this HEALTHY taco recipe. It turned out DELISH :)

Since cobia is a thicker fish I cubed it up before I cooked it. I marinated the fish in garlic and taco seasoning for a couple of hours. I got my pan nice and hot and seared all sides...YOUR MEAT IS DONE! :) It literally took 4 minutes.

For the garlic sauce:

6 cloves of garlic
1 tlb white vinegar
4 tlb lime juice
1 tlb olive oil
salt & pepper to taste

Throw all the ingredients in a blender/food processor and pulse until smooth.

I just garnished the taco meat with chives. I used miniature tortilla's which are only 1 point and drizzled the garlic sauce over the top. It was SIMPLe and DELISH! you should try it.
